The Wedge serves up classic tavern fare

Atwood Avenue’s latest bar wants to be your go-to stop dedicated to all things Wisconsin. The Wedge, 2001 Atwood Ave., opened early this year in the former One Barrel Brewing space.

“I love all things Wisconsin,” said Jacob Guyette, the bar’s owner. “I want this place to have Wisconsin tavern vibes, cozy and nostalgic.”

The array of neon beer signs and exposed brick walls do a lot to achieve Guyette’s goal, as does the menu, which is populated exclusively with Wisconsin products — mainly cheese and beer.

In addition to a full bar and a local lineup of draft and canned beers, wine and nonalcoholic beverages, The Wedge food menu features build-your-own cheese boards with an assortment of Wisconsin-made cheeses, meats and garnishes. The bar also offers four cheese sandwiches, a callback to Guyette’s childhood.

“I grew up with a single mom working three jobs to support twins,” he said. “We made a lot of cheese sandwiches after school.”

The sandwich offerings range from classic flavors like The Wisco — cheddar cheese, summer sausage, pickles, horseradish mustard and mayo — to a little more adventurous. The Swiss Apple pairs Limburger cheese with red onion and whole-grain mustard on rye bread.

Guyette brings years of experience in the restaurant industry to his bar, including a short stint as a catering chef at the Goodman Community Center, as well as several years working with Tory Miller at L’Etoile, Graze and Estrellon.

“I learned a lot about sourcing local food from Tory,” Guyette said. “And through him, I was able to meet some great Wisconsin cheesemakers.”

Guyette’s experience is evident in the curated list of cheeses available. His favorite flavors? “Anything from Roellli Cheese Haus in Shullsburg, Wisconsin.”

The bar has only been open a few months, and they’re testing out events to draw in customers and give neighbors a place to gather and socialize. In April, The Wedge hosted a drag cheese raffle, and it was so successful they plan to repeat it quarterly. In May, they hosted their first night of weekly Thursday trivia.
